Ste. Chapelle 2007 Ice Wine Riesling – Wine Review

Ste. Chapelle Winery is located in the rolling hills of southwest Idaho with the Snake River winding through the valley below. The winery is named after La Sainte Chapelle in Paris, built by King Louis IX as the court Chapel. The winery was established in 1976, and the first wine produced by Ste. Chapelle was Riesling.
The Ste. Chapelle Riesling Ice Wine is produced by allowing the grapes to freeze on the vine, and then they are harvested while they are frozen. The frozen grapes are then pressed, with just small amounts of the juice trickling down to become this incredible dessert wine. The aromas and flavors are of tropical fruit nectar. This is a very sweet dessert wine, and one that would pair well with strong cheeses, or by it self to be slowly sipped.
