Paso Creek 2007 Cabernet Sauvignon – Wine Review

Paso Creek Winery has 350 acres located in the heart of California’s Central Coast, where Cabernet Sauvignon thrives in the heat of the day, along with the cooling effect of the night-time temperatures. The wine maker for Paso Creek has two simple precepts that he follows, respect the fruit, and represent the region. The Paso Robles region has its own unique terroir, and that is what comes out in the wines that they produce.
The 2007 Paso Creek Cabernet Sauvignon is a big, bold, dark cab, with the aroma characteristics that one looks for in a Cab. On the nose this wine is fruit-forward, with aromas of blackberries, black plums, currants, dried fruit, and a touch of spice. The flavors are of blackberries, plums, currants, raisins, tobacco, leather, oak, and finishes with a delicate spiciness. The 2007 Paso Creek Cab is full-bodied, fruit-forward, with firm tannins, and a long finish. This wine should mature well for another few years and will only get better as it ages. I would pair this with a New York strip steak, topped with Stilton Bleu Cheese.
